The authors examine a “double climate dividend” to underscore the importance of the inherent relationship between the land, climate, food and public health. Specifically, they use the EAT-Lancet planetary health diet to show how shifting to plant-based foods from animal-based foods can simultaneously reduce greenhouse gas (GHG) emissions via 1) the production channel, and 2) sequestering carbon if the spared land can return to its natural state. Focusing on 54 high-income nations, the results show that this shift could reduce agricultural production GHG emissions related to diet by 61% while also sequestering up to 98.3 GtCO2 equivalent.
