Food Security, Obesity, and Meat-Derived Carcinogen Exposure in US Adults
White meat consumption was highest among non-obese males, who were also exposed to greater amounts of 2-amino-3,4,8-trimethylimidazo[4,5-f]quinoxaline. Red meat consumption and exposure to several other carcinogens was highest among females who were food insecure and obese.

More DetailsFood System Impacts on Biodiversity Loss: Three Levers for Food System Transformation in Support of Nature
The global food system drives biodiversity loss with the largest percentage of the food system’s impact being a result of animal-based agriculture and production. This paper emphasizes the effectiveness of a switch towards plant-based diets for biodiversity health.
More DetailsMicrobial Carcinogenic Toxins and Dietary Anti-Cancer Protectants
From the abstract: “Subtilisin and Bacillus subtilis are present in the gut and environment and both are used commercially in agriculture, livestock rearing and meat processing. The enzymes deplete cells of tumour suppressors such as deleted in colorectal cancer (DCC) and neogenin, so their potential presence in the food chain might represent an important link between diet and cancer.”
More DetailsAmmonia Emissions, Impacts, and Mitigation Strategies for Poultry Production: A Critical Review
This review paper examines factors impacting ammonia (NH3) emissions within the poultry sector. The authors acknowledge that NH3 is of particular concern for its effects on air quality, the environment, and “manure nutrient losses.”
