In this brief communication, the authors explore how using the land to produce foods creates a carbon opportunity cost (COC). A COC is the amount of CO2 that could be removed (but isn’t) if land currently used to produce food was allowed to return to its natural/native state. They find a 66% chance of containing global warming to 1.5°C if global food production shifts to plant-based diets by 2050.
